It was born out of necessity, my body was speaking to me through chronic symptoms, and conventional answers weren’t enough. I started listening closely to how food affected my energy, mood, and gut health. Over time, I developed a deeply personalized approach to eating: intuitive, research-backed, and rooted in whole, nutrient-dense foods. I crafted meals to support my immune system, heart, and detox pathways, experimenting with herbs, phytonutrients, and even the way food was prepared.

What started as survival became a calling. I founded Chef by Necessity to help others reclaim their health in the kitchen. You don’t need to be a professional chef, just curious, willing, and ready to take charge of your well-being. This isn’t a diet. It’s a way of living with intention, guided by your body’s innate wisdom. I believe there’s a chef and an idealist in all of us.

As I share more of this path in my upcoming book, The Mold Paradox, I reveal how illness, specifically from hidden mold exposure, became the unexpected teacher that led me back to the wisdom of real food and the deep intelligence of the body.

Eating like an idealist isn’t a trend or a diet. It’s a return. To what nourishes. To what’s true. To the quiet knowing that your body, when listened to, will show you the way.
